Levan Chokheli
“The future of Georgian wine lies in its past.”
Over 15 years, Levan has dedicated his career to rediscovering and working with rare indigenous Georgian grape varieties. He collaborates with researchers, farmers, and nurseries to identify, plant, and vinify grapes that were nearly forgotten. His passion is preserving genetic diversity and helping young winemakers build unique identities through native varieties rather than international trends.
The winery functions as a living archive:
Experimental micro-vinifications of rare grapes
Collaboration with local growers and scientists
Mixed traditional and modern fermentation techniques
Detailed documentation of grape performance
Limited releases focused on education and awareness
The emphasis is exploration over volume.
I never stop learning from Georgian native grape varieties… they are just so facinating.
